In the late 90s, Cosme moved from Mexico to the US to continue his car mechanic career but his lack of speaking English held him back. His brother coaxed him to take a job as a porter at a high-end French restaurant, cleaning bathrooms and the kitchen. The chef asked him to do a favor, and impressed by his speed, brought him into the kitchen. He became the best sauce maker in the restaurant.
Cosme ended up following the same chef to two more restaurants over the course of seven years.
In 2013, Cosme opened Casa Enrique, named after his partner's dog. He went to his family for recipes: "Everything you see on the menu is what I was eating at my house."

I have always carried a Sharpie. If I don't have it, I always get another one.
I started 10 years ago, maybe more. I have a bad memory and sometimes I forget what I need to do. And I write it down before I forget.
Any day I run out of something, I write it down. For me, it's safe. It always goes right in my book. I keep it in my back pocket or my car.
I keep a Sharpie for orders and a pen for recipes.
